Tasting Notes
Aromatic and expressive, this wine shows lifted notes of bay leaf, blackcurrant, and dried herbs. The palate is fine and layered, with sinewy tannins, vibrant acidity, and a savory, earthy edge. Fermented in a concrete egg, which builds texture and purity without the use of oak or additives. Unfined, with minimal sulphur used only at bottling.
